Chicken Sopas

This is probably the best sopas I've ever cooked.  And the one with the shortest cooking time too.  Haha.  Probably because I used leftover chicken.

ingredients:
  • chicken (can be shredded, with bone or chunks so long as it's cut into smaller pieces; breast or fillet is especially superb for this) - we used our leftover black roasted chicken (from fairprice) from previous night's dinner 
  • about 4 cloves of garlic  
  • half of a medium-sized red onion
  • one can of carnation full cream milk
  • half pack (or a whole pack, whatever suits you) of macaroni pasta - actually, any kind of pasta will do
  • two pieces of bay leaves
  • diced carrots (minced is okay, too)
  • chicken cubes (i would have used chicken stock, but the one that i got from fairprice for free didn't smell good anymore)
  • spring onions - one onion in the kitchen started growing onion stalks, so i just cut them off
  • grated cheese
  • salt and pepper

shred the leftover chicken into smaller pieces, remove the bones.  if it's fresh, then cut it into smaller pieces.

heat the cooking pan and pour oil into it (olive oil for a better taste). 

throw in the chicken and cook it until the meat has turned white.

add the onions and cook for another 1 or 2 minutes or until they are translucent enough.  then, add the garlic.

when the garlic is done, add the bay leaves and diced carrots.  saute for another 2 or 3 minutes.

add salt and pepper.

add the full cream milk.  allow it to simmer.  stir it every now and then to prevent the milk from curdling.

when it starts to boil a little, add the pasta.  then, add about half a cup of water.  the amount of water actually depends on how much pasta you are going to cook.  it may be one cup.  just make sure the pasta is covered with liquid.  stir it every now and then.

wait until the pasta is cooked.

while waiting, add the chicken cubes.  keep stirring but make sure you don't smash the pasta.

once the pasta is done, add the grated cheese.  stir.  then, add the spring onions.  stir again and let simmer for another couple of minutes. 

done!


if there's more than enough sopas, you can keep the rest in the fridge then re-heat it the next day.  however, the pasta will most probably soak up the sauce or liquid of the sopas.  what i did was mix about half a bowl of milk (doesn't have to be another carnation can; regular drinking milk is okay) and grated cheese and salt.  stir it like you're making scrambled eggs.  then, add it to the leftover sopas while you're re-heating it.

After a gazillion trials and print tests, ross (credit is all his, of course) has finally got everything right. The paper size, margins, color, font size, everything! Yay!

Can't wait to make the actual invites! Next stop, envelopes.

Wicked post-valentine date

Yup. We didn't want to add to add to the valentine crowd, so we had dinner at home instead.

We didn't forget to celebrate though. And our celebration cost us more than what we normally spend on a luxurious date, but what the hell... It was wicked!

Despite the not so good seats because the place was packed, ross and i still had so much fun. Everything--my aching feet, expensive tickets and seats, overly eager us taking a cab to MBS, smelly seatmates--was worth it.

one week at a time

whenever i want to train myself to do something, i have to continuously do it for one week straight.  that's how i sort of condition or train my body to think "okay, from now on, this is what we're going to do."  except maybe when i quit smoking...or maybe not.  i remember i was really sick that time that even a faint smell of smoke made my nose very itchy.  i couldn't remember if it was a week or only a few days, but clearly i had to stop smoking to make myself well.  and when i did, it seemed that my body didn't want nicotine anymore.  so i stopped smoking altogether.  so there, i guess it was the same after all.  haha.

now i'm doing this again.  consciously this time.  i really hope to accomplish everything.  i don't want to stress myself into doing several things at the same time (except for those which are clearly doable).  my ultimate goal being:  to go back to my original shape before i came to singapore.  i don't weigh myself, so my clothes would have to be the judges.

my goals for the next 14 or so weeks.

1.  oatmeal for breakfast everyday  - done


2.  sync meal times - done

3.  sleep before 12 midnight - currently doing (well, started sunday night)

4.  wake up early and willingly (up by 7.30 during weekdays)

5.  take the stairs going up to our unit - oh yes, ground floor to the 9th floor.  stairs.  - mondays to fridays - currently doing

6.  30 minutes walk everyday - i really have to make a conscious effort for this.  everyday.  as in including weekends.  regardless if we go out or not.

7.  jump 15-20 times everyday - everyday

8.  more water intake - again, another conscious effort.  i have to count this.  8 glasses of water everyday. - starting today

9.  no more iced tea - start today


10.  more kindle, less iphone - yes.  go back to reading.  to be honest, my iphone drags me down.  i do less of whatever needs to be done because i constantly check my emails and the games that i play.  haha.  need to be more conscious.

11.  a cup of tea everyday - green tea is soooo bitter!!!  but it's really good to my bladder. - currently doing

12.  vegetables for every rice meal - i cannot not eat rice, especially for some dishes.  so, should that happen, i MUST have some kind of vegetable for each meal.


13.  lessen meat intake - i'm not trying to be a vegetarian or anything.  just less beef, pork and then chicken.  this will be sooooo hard because ross is allergic to most seafoods and does not feel full if served a vegetable dish.  and i'm always cooking for the both of us.  sooo hard and expensive.

14.  run for 30 minutes twice a week - i really need to do this again. 



NOTE:  this maybe the most sensible post i've ever done so far.  haha.
